Kombucha is a fermented, bubbly drink that is drunk at any time of the day. It is the natural result of a fermentation of sweetened tea after a symbiotic culture of healthy bacteria and yeast, better known under the English acronym “SCOBY” (Symbiotic Culture Of Bacteria and Yeast).

Kombucha is a fizzy functional drink made of flavoured tea, fermented through a Simbiosis Colony of Bacterias and Yeasts (also known as S.C.O.B.Y) in a controlled environment. Kombucha tea is known under different names throughout the world such as red tea fungus, Champignon de Longue vie, Lingzhi, kocha kinoko, Chainii grib, and Chainii kvass. It is traditionally prepared by fermenting flavoured black tea with a symbiotic culture of yeast and bacteria. This beverage is thought to have originated in China over 2000 years ago, while there are many historical reports of this beverage being consumed in countries such as Russia, Germany, and the Middle East as well.
